About

That’s the moment this punch was made for. Dark rum, pomegranate juice, a squeeze of lemon and a splash of soda. Four ingredients, a jug, and you’re done. It glows a deep ruby red, the colour of the lanterns hanging outside every home this week, and it tastes tart, bright and just sweet enough.
Pomegranate does most of the work. It gives the punch its colour and a clean, fruity sourness that keeps people coming back for a second glass. Rum adds warmth underneath. Lemon sharpens it. Soda keeps it light, so it’s easy to sip through a long evening of food, games and catching up.

Shaken or Stirred?
For one glass, shake it. For a jug, stir it. Shaking a single serve chills the rum and pomegranate fast and blends them evenly. A big batch only needs a good stir in the jug before guests arrive. Either way, the soda goes in last, straight into each glass, so it stays fizzy.
What You'll Need
For one Ruby Lantern Punch:
- 60 ml Dark rum
- 60 ml Pomegranate juice
- 15 ml Lemon juice
- Ice Cubes
Glass: Highball
Garnish: Pomegranate seeds, a mint sprig and Soda, to top (about 60 ml)
Pro tip: Freeze a few pomegranate seeds in your ice tray the night before. As the cubes melt, the seeds drop into the glass like little rubies, and nobody needs a separate garnish. For a jug, chill the punch for an hour and keep the ice in the glasses, not the jug, so the last pour tastes as good as the first.
How to Make It
- Add the dark rum, pomegranate juice and lemon juice to the shaker with ice.
- Shake until cold.
- Strain into a highball glass over fresh ice.
- Top with soda.
- Scatter pomegranate seeds on top, add a mint sprig and serve.
- For a jug of ten: mix 600 ml dark rum, 600 ml pomegranate juice and 150 ml lemon juice. Chill, then pour over ice and top each glass with soda.
